Join the team at Bird Bang'n Chicken, Melbourne's best fried chicken hotspot, voted No.1 by Time Out two years running. We're after a sharp, high-energy Sous Chef to help lead a kitchen that regularly pushes 200 covers on a Friday or Saturday.

This isn't a stand-back-and-watch role. You'll work side-by-side with our Head Chef running day-to-day operations and leading a BOH team of 6–7, with 4-5 on the line through peak service. You'll also step up to lead the kitchen independently when needed — sometimes early on. We're after someone ready to own it, not ease in. What you'll do

Run the line during peak service — fast, smooth, consistent, no dropped standards.

Step up and lead the kitchen when the Head Chef is away.

Own quality, presentation and portion control across every plate.

Train, mentor and fire up a team of junior chefs and kitchen staff.

Manage stock, ordering, rotation and waste with immaculate food safety and HACCP standards.

Support rostering, prep planning,



labour efficiency and put your stamp on recent menu specials.

What we’re looking for

Experience as a Sous Chef or a strong Junior Sous ready to step up.

Proven leadership in high-volume, fast‑paced kitchens — you're calm when it’s chaos.

Solid grasp of food safety, hygiene and compliance.

Sharp communication, organisation and time management.

A current Food Safety certificate and the right to work in Australia.

You're available for a full hospitality roster, including nights, weekends and public holidays
