Job Type: Full-time Senior Chef

Hours: 38–42 hours per week

Rate: $28 – $35 per hour, negotiable based on experience

Smoque Brasserie in Chatswood is seeking an experienced Senior Level Chef to join our kitchen team immediately.

Duties and Responsibilities

- Develop food presentation standards and design food display arrangements
- Plan production schedules and assess staffing requirements to maintain smooth service
- Calculate required ingredient quantities and estimate food costs
- Collaborate to develop recipes and seasonal menus, considering ingredient availability and customer demand
- Supervise, train and guide kitchen staff on food preparation, cooking, garnish and plating to uphold consistent quality standards
- Inspect raw supplies, kitchen equipment and work areas to comply with operational standards
- Manage inventory: ordering goods, stock rotation, waste minimisation; coordinate purchasing and price control within budget
- Oversee full kitchen daily operations; participate in interviewing, hiring and training new kitchen team members
- Monitor food cost targets and labour budget performance
- Create staff rosters and manage daily shift arrangements
- Maintain full working knowledge of OH&S;,



HACCP and the restaurant’s Food Safety Program
- Regularly monitor kitchen sanitation and ensure all team members follow hygiene regulations

Selection Criteria
- Minimum Certificate IV in Commercial Cookery or equivalent relevant qualification
- Minimum 2 years hands-on experience in a comparable senior chef role
- Strong communication skills to work closely with the whole team
- Able to thrive in a busy, fast-paced multi-function commercial kitchen
- Experience developing and rolling out Indian menus, covering casual dining through refined contemporary dishes
- Solid understanding of food costing and basic kitchen business management
- Positive attitude and professional work ethic
- Possess a current Food Safety Supervisor Certificate
