Head Chef | The Plough & Ale Hotel, Calderwood NSW 2527
Plough & Ale Hotel, in Calderwood NSW is a popular local hub where we serve up cold beers, hearty meals and a friendly loyal crowd who keep coming back. We're after an experienced Head Chef to lead the kitchen team, run day-to-day operations and deliver exceptional hospitality every day, as that's the Laundy way.
You'll mentor and inspire the team, drive performance and bring your experience, ideas and energy to shape the exciting future of this loved local hub.
Key Responsibilities
- Effectively lead and manage a busy kitchen team
- Work directly The Group Executive Chef on the creation of seasonal menus, special event menus, and specials
- Work collaboratively with the Venue Manager and FOH team
- Effectively manage and maintain COGS,wages, and profitability expectations
- Manage kitchen roster and ensure compliance
- Manage food quality, portion control and presentation
- Your creativity is encouraged and will be showcased through various menus (seasonal, function, special events, weekly specials)
- Maintain high levels of hygiene and cleanliness
What You'll Bring to the Role
- At least 3 years’ experience as a head chef or senior sous chef at a busy pub kitchen or restaurant
- An understanding of financials ie wages, COGS, pricing calculations for menus
- A desire to learn more from industry leading mentors
- An understanding of strategicfood ordering to minimise waste and maximise profit margin
- Passion and creativitydemonstrated through the menu and mealofferings
- Hands on leadership style who fosters creativity, respect and empowers the team
- Excellent communication skills
- You must be able to worknightsand weekends
