About the Role
Step into a role where you'll shape the guest experience at the heart of the Central West. As F&B; Manager, you'll take the lead on the hotel's restaurant and bar, driving service excellence across both outlets, and you're someone who brings ideas to the table, not just execution: partnering with our marketing team on standout activations and seasonal promotions, coordinating and delivering high-quality C&E; from concept through to flawless execution, and building genuine relationships with local producers and businesses to bring authentic Central West flair into everything we serve.
Key Responsibilities
- Drive revenue growth across the restaurant and bar by focusing on spend per cover, and profitability.
- Manage inventory, stock control, and expenditure through robust control systems.
- Analyse F&B; financials including spend per cover & Per Occupied Room (POR), and departmental profit margins.
- Lead roster planning and labour cost management aligned with budget forecasts.
- Build a high-performance team culture focused on engagement, development, and retention.
- Ensuring continued adherence with all WHS procedures, hygienic food handling and RSA practices.
- Collaborate with the Executive Chef to optimise menus and wine lists for profitability and customer appeal.
- Respond to guest feedback and implement service improvements to enhance experience.
- Forecast demand, plan marketing initiatives, and evaluate event feasibility to maximise revenue.
- Generating feasibility models for adhoc events or promotions analysing the potential profit and loss. E.g. Mothers' Day, Melbourne Cup, Christmas Day luncheons.
Skills & Experience
- Proven experience in a senior F&B; position working in Hotels, Restaurants or Clubs.
- Strategic in creating new ideas to drive revenue and guest engagement to dine in-house.
- Build robust relationships with guests and key stakeholders.
- Great communication, team leadership, mentoring and training skills.
- Strong financial acumen knowledge (e.g. P&L; analysis, forecasting).
- A passion for hospitality, people focused and innovative thinking.
- Excellent organisation and time management skills.
- Proficient with POS systems and the Microsoft suite.
