Redcape Hospitality is looking for an experienced Head Chef to lead the kitchen at Shamrock Hotel Motel in Mackay . This is an opportunity for a confident kitchen leader to bring the team together, strengthen performance and help shape what comes next.

About the Role

You’ll run Shamrock’s food operation across everyday dining, functions and conference facilities, leading a hands-on kitchen team through busy service and everything that happens behind it.

You’ll help bring new menus to life, strengthen the way the kitchen operates and build a team that takes pride in the food it serves. You’ll have room to lead, with experienced people around you when you need support.

What You’ll Do

- Work with Redcape’s Executive Chefs to develop and launch new venue and functions menus

- Lead and develop the kitchen team through clear direction, coaching and support

- Keep the kitchen, front-of-house and venue management working together





- Drive consistent food quality, presentation and service delivery

- Manage COGS, labour, stock and kitchen performance against budget

- Maintain high food safety, compliance and WHS standards

What We’re Looking For

- Proven 3–5 years’ experience as a Head Chef in a high-volume venue

- Strong people leadership that builds trust, strengthens culture and brings teams together

- Exceptional time management, with flexibility across a rotating roster including weekends

- Strong commercial capability across COGS, labour, compliance and P&L; performance

- Confidence using rostering, reporting and kitchen management systems, including Cooking the Books
