POSITION
Full time Chef position available in Moorabbin, VIC 3189 (Yacht Based – Cairns, Melbourne, Kimberley)
SKILLS
The role requires you to hold at least a relevant AQF (or equivalent) Diploma and at least 1 year of relevant work experience. At least three years of relevant experience may substitute for the formal qualification.
RESPONSIBILITIES
The Chef is responsible for planning, preparing, cooking and presenting meals for owners, guests and crew aboard a private vessel. The role includes developing menus that accommodate dietary requirements and preferences, managing all galley operations, and ensuring consistent food quality and service.
Key responsibilities include preparing daily meals and food for special occasions and excursions; managing provisioning, stock levels, food storage and rotation; minimising wastage; and maintaining appropriate supplies for extended voyages, including operations in remote locations.
The Chef is responsible for maintaining food safety, hygiene, allergen management and onboard safety standards. The position also requires coordination with the Captain and crew regarding meal service, guest activities, voyage schedules and operational requirements.
POSITION DUTIES
- Plan menus in consultation with owners, guests, the Captain and management, considering dietary requirements, seasonal availability, voyage schedules and costs
- Estimate food and labour costs, order supplies and manage provisioning for daily operations and extended remote voyages
- Prepare, cook and present high-quality meals for owners, guests and crew using a range of cooking techniques
- Develop bespoke Modern Australian and international menus featuring premium regional and locally sourced ingredients where available
- Cater for dietary requirements and varied dining formats, including plated meals, barbecues, picnics, shore excursions and special occasions
- Monitor the quality, flavour and presentation of dishes at all stages of preparation and service
- Discuss food preparation, menus and dietary matters with the Captain, management, kitchen, service and other crew members
- Demonstrate preparation techniques, advise on cooking procedures, and select and train assisting staff where required
- Coordinate food preparation and service around guest activities, cruising schedules and changing operational requirements
- Prepare nutritious, wide-ranging and well-balanced crew meals
- Inspect deliveries and manage refrigerated, frozen and dry stock, including storage, labelling, rotation and waste control
- Freeze, preserve and safely store food to maintain quality and sufficient provisions during extended voyages
- Maintain accurate inventories and advise the Captain or management of provisioning requirements
- Explain and enforce food safety, hygiene, allergen management and temperature-control procedures
- Maintain a clean, organised galley and ensure equipment is safely operated, secured and maintained
- Work collaboratively with the Captain and crew and participate in safety drills, emergency procedures and reasonable general crew duties
- Maintain guest confidentiality and provide professional, discreet and personalised service at all times
ADDITONAL ATTRIBUTES
- Solid knowledge of food safety, hygiene and allergen management
- Ability to independently manage a yacht galley in a fast-paced marine environment
- Excellent organisation, time management and remote provisioning skills
- Strong attention to detail and consistency in food preparation and presentation

- Reliable, adaptable and responsive to changing guest and operational requirements
- Creative approach to bespoke menu development using seasonal and available ingredients
