Job Description

The Trustee for Hui Huang Trust We are currently seekingawell-qualified Cook to join the dynamic, busy team at our newly opened branch, Yutaka Sawa Epsom. Yutaka Sawa offers high-quality Japanese food in a warm, welcoming environment for all our customers.

The cooks will be responsible forpreparing variety of foodsaccording to our menu and clients’ specifications. The candidatewill take the following duties: Preparing, cooking and presenting a range of Japanese dishes, such as sushi and sashimi, tempura, teriyaki and curry dishes, grilled seafood, and noodle and rice dishes, to the restaurant’s recipes and standards Checking fish, seafood, meat and produce for quality and freshness before use Carrying out mise en place, cutting and portioning ingredients and preparing stocks, sauces and rice ready for service Operating grills, fryers and stovetops, and applying the right techniques (grilling, deep-frying, steaming and stir-frying)



to cook each dish correctly Seasoning and tasting dishes during cooking to achieve the intended flavour and texture Portioning and plating dishes with the appropriate sauces, garnishes and accompaniments Preparing dishes to meet special dietary requirements and customer requests Receiving deliveries, storing and rotating food correctly, and helping monitor stock levels Keeping the kitchen and equipment clean and following food safety and hygiene requirements

The successful candidates need to demonstrate below requirements: At least Cert III in Commercial Cookery, equivalent or above qualification; At least one year of relevant kitchen experience Knowledgeable in Japanese or Asian cuisine and cooking; Ability to work multi-task; The ability to work independently; Good communication skills; A positive attitude with a solid work ethic.
