KATSUGYU GADIGAL SYDNEY PTY LTD The Cook is a key member of the kitchen brigade at Gyukatsu Kyoto Katsugyu Australia. The primary purpose of this role is to prepare, cook, and present authentic Japanese dishes — with a primary focus on wagyu gyukatsu — to the brand's exacting culinary standards.
The Cook works closely with the Head Chef to ensure consistent food quality, exceptional presentation, and strict adherence to food safety requirements during all service periods.

responsibilities Reporting to the Head Chef, the Cook will be responsible for the following: Prepare, cook, and present Japanese dishes including katsu, ramen, donburi, and related menu items to the highest culinary standards Operate and maintain all kitchen stations including fry, prep, grill, and cold sections as directed Follow standardised recipes, portion controls, and plating specifications consistently during all service periods Assist in the development and refinement of menu items in collaboration with the Head Chef Ensure strict compliance with food safety, hygiene, and sanitation standards (HACCP) at all times Manage stock rotation using FIFO (First In, First
Out) procedures and minimise food wastage Receive, inspect,
and store food deliveries in accordance with food safety requirements Maintain cleanliness and organisation of kitchen workstations, equipment, and storage areas Operate within Work Health and Safety (WHS) guidelines and report hazards promptly Support and mentor junior kitchen staff as required Collaborate effectively with front-of-house staff to ensure timely and seamless service delivery Adapt to varying service volumes and maintain composure and quality during peak periods Qualification &
experience Qualifications/Experience required: Cert III or IV in Commercial Cookery or Hospitality plus 1 year of full-time or equivalent experience preferred in Australia. Ability to work in a fast-paced workplace Strong attention to detail and commitment to quality Reliable, punctual, and able to work evenings or weekends as required Positive attitude and willingness to learn
