As our business continues to grow, we are seeking a skilled Butcher & Smallgoods Maker to join our dedicated production team.

Position Overview

The successful applicant will be responsible for the preparation, processing, and production of Wagyu beef and smallgoods, including biltong, while maintaining strict hygiene and quality standards.

Key Duties & Responsibilities
Preparing, trimming, cutting, and portioning Wagyu beef
Producing biltong and other smallgoods using traditional curing and drying methods
Handling meat processing equipment safely and efficiently
Measuring, mixing, and applying marinades, spices, and curing agents
Monitoring drying, curing,



and storage processes to ensure consistent quality
Maintaining compliance with food safety, hygiene, and workplace health & safety standards
Cleaning and sanitising work areas, tools, and machinery
Managing stock rotation and minimising waste
Working collaboratively within a small production team
Assisting with quality control and continuous improvement processes

Skills, Qualifications & Experience
Relevant qualification such as Certificate III in Meat Processing (Retail Butcher) or equivalent, or
At least 3 years of relevant full-time experience as a butcher and/or smallgoods maker
Demonstrated experience in smallgoods or cured meat production preferred
Solid understanding of food safety standards (HACCP knowledge advantageous)
High attention to detail and commitment to product consistency
Physically fit and capable of manual handling tasks
Reliable, punctual, and able to work independently when required

Salary & Conditions
$76,515 to $90,000 per annum, commensurate with skills and experience
Full time, ongoing position
