The Role

This is an exceptional opportunity to lead one of the world’s most celebrated and recognisable restaurant brands. As Restaurant Manager, you will oversee the daily operations and overall success of Nobu Sydney, leading a passionate front‑of‑house team in partnership with the Chef de Cuisine to deliver unforgettable guest experiences. You will play a pivotal role in shaping the culture, performance and reputation of one of Sydney's premier dining destinations, welcoming local and international guests, VIPs and Crown's most valued patrons. We’re seeking an inspiring hospitality leader who is passionate about service excellence, thrives in premium dining environments and is committed to developing high‑performing teams.

In this role you will:

- Lead the day‑to‑day operation of Nobu Sydney, ensuring exceptional service standards and memorable dining experiences.
- Inspire, coach and develop a high‑performing front‑of‑house team, creating a positive and engaging workplace culture.
- Drive the restaurant’s operational and commercial success through effective planning, labour management and guest satisfaction.
- Be a visible and influential leader, actively supporting your team during service and leading by example.
- Partner closely with the Chef de Cuisine to deliver seamless service and an outstanding guest journey.
- Build meaningful relationships with guests,



creating memorable experiences that encourage loyalty and repeat visitation.
- Identify opportunities to enhance service, team performance and operational efficiency.
- Support the ongoing growth and success of one of Sydney's most iconic dining venues.

About You:

- You are an experienced hospitality leader who is passionate about delivering exceptional guest experiences and developing successful teams.
- You bring confidence, professionalism and a hands‑on leadership style that enables both guests and team members to feel valued and supported.
- Proven experience in a Restaurant Manager, Venue Manager, or Food & Beverage leadership role within premium hospitality environments.
- A strong understanding of restaurant operations, financial performance and team management.
- A genuine passion for guest experience and creating memorable dining moments.
- Demonstrated ability to lead, coach and develop diverse teams.
- Strong communication and relationship‑building skills.
- The ability to remain calm, adaptable and solutions‑focused in a dynamic environment.
- A commitment to continuous improvement and service excellence.
- Experience within luxury, premium dining or high‑volume hospitality environments will be highly regarded.
