Noẽma is the latest concept from Lucas Collective, bringing a fresh take on contemporary Mediterranean dining to Melbourne’s CBD.

Inspired by contemporary Greek cuisine, the menu will celebrate exceptional produce, bold flavours and the theatre of Josper-grilled cooking, all within a striking new venue spanning a main dining room, intimate basement and private dining spaces.

The Opportunity

What you’ll bring:

- Proven leadership experience in a quality à la carte restaurant.
- Robust operational knowledge across compliance, labour, rostering, time and attendance, stock and inventory management systems.
- A passion for developing, coaching, and inspiring high-performing teams.
- A commitment to delivering exceptional guest experiences.
- The ability to thrive in a fast-paced, high-pressure environment.
- Excellent communication, organisation, and time management skills.
- Restaurant opening experience is highly regarded but not essential.
- Flexibility to work evenings, weekends, public holidays, and opening or closing shifts.
- A current RSA certificate.
- A qualification in Hospitality, Management, or a related discipline is advantageous.
