GRANO by Wildseed is seeking an experienced Lead Chef to lead our high‑volume, very busy Italian kitchen at The Goods Shed. You’ll drive quality, consistency, and innovation across our menu — backed by a solid, skilled kitchen team that values professionalism, pace, and pride.

Key responsibilities

- Lead, train, and mentor the kitchen team to uphold premium standards
- Plan and execute seasonal Italian menus, including handmade pasta and wood‑fired pizzas
- Oversee food preparation, cooking, and plating for consistency and quality
- Maintain strict food safety, hygiene, and WHS compliance
- Manage food costs, inventory, and supplier relationships
- Collaborate with front‑of‑house to ensure seamless service
- Implement SOPs and recipes to support efficiency and consistency

What we’re looking for

- 7–10+ years’ professional culinary experience, with strong Italian expertise
- Proven leadership in a busy, high‑volume kitchen environment




- Strong knowledge of Italian techniques, HACCP, and WHS
- Skilled in menu planning, costing, and inventory management
- Calm, organised, and confident during rapid‑paced serviceCulinary qualifications (highly desirable)
- Passion for authentic Italian cuisine and exceptional dining experiences
