About the Role

We are seeking an experienced Fish Cutter to join our team on a part-time (25-30 hours per week)

This is a hands‑on role responsible for preparing fresh seafood for both retail sale and our broader food operations. You'll use your knowledge and knife skills to fillet, trim, portion and prepare a variety of seafood products while maintaining excellent standards of quality, presentation and food safety.

You'll work closely with our retail and kitchen teams to ensure fresh seafood is prepared efficiently and ready to meet customer and operational requirements throughout the day.

Key Responsibilities

- Fillet, trim, debone and portion a variety of whole fish to product and customer specifications
- Open and prepare oysters,



shellfish and other fresh seafood products as required
- Prepare seafood for retail display, customer orders and kitchen use
- Inspect seafood for freshness and quality and identify any products that do not meet required standards
- Remove bones, scales and other defects while maximising product yield
- Maintain high standards of presentation across prepared seafood products
- Ensure appropriate handling, storage and temperature control of fresh seafood
- Maintain a clean, organised and hygienic preparation and cutting area
- Clean and safely maintain knives, cutting equipment and other tools
- Follow all food safety, hygiene and workplace health and safety procedures
- Assist with stock rotation and inventory management to maintain freshness and minimise waste
- Work efficiently to meet demand during busy trading periods
- Collaborate with retail, kitchen and management teams to support smooth day‑to‑day operations

What We’re Looking For

We're looking for someone with genuine experience handling and preparing fresh seafood who can work confidently and efficiently in a busy environment.

The successful candidate will ideally have:

- Previous experience as a Fish Cutter, Fishmonger, Seafood Processor or in a similar seafood preparation role




- Strong knife skills and demonstrated experience filleting and portioning a variety of fish
- Knowledge of seafood products, quality and freshness
- Experience preparing oysters and shellfish would be highly regarded
- A solid understanding of food safety, hygiene and safe food handling practices
- Excellent attention to detail and pride in the quality of your work
- The ability to work efficiently while maintaining quality and minimising product waste
- A reliable, positive and team‑focused approach
- The physical capability to undertake a hands‑on role, including standing for extended periods and working in refrigerated environments
- Flexibility to work across a range of trading hours, including weekends as required
