A brand-new Sydney venue, a wine program ready to make its mark and the opportunity to step into your first Head Sommelier role. This is one for someone who loves being on the floor, knows their wine and wants to bring some personality to the role.
The Opportunity
Fresh from a successful soft opening, this exciting new Sydney venue is ready to hit the ground running - and they're looking for a Head Sommelier to lead the wine experience day to day. Reporting directly to the Group Sommelier, you'll have plenty of support and guidance while still having real ownership within the venue. You'll work together on the direction of the wine list and wine-by-the-glass program, while you become the go-to wine person on the floor.
This is a hands-on role through and through. Think four days in service, connecting with guests and working alongside the team, plus one dedicated admin day to get into the cellar, ordering, list development, stock and planning. For an Assistant Head Sommelier or strong Sommelier waiting for the right opportunity to step up - this could be it.
What You'll Be Doing
Own the day-to-day wine program while reporting into the Group Sommelier
Spend four days on the floor, leading the wine experience and getting amongst service
Have one dedicated admin day each week for ordering, stock, cellar and list management
Help curate and evolve the wine list and wine-by-the-glass program
Keep the cellar organised, accurate and running smoothly
Lead engaging fortnightly wine training sessions
Build a team that feels confident talking about, recommending and selling wine
Support and develop a Junior Sommelier
Work alongside the kitchen and leadership team around menu and wine pairings




Take charge of a table, read the room and make great wine feel approachable
Roll your sleeves up and jump in wherever the team needs you
Who Are You?
You know your wine - but you also know hospitality is about people. We're looking for someone with energy, personality and a genuine love of being on the floor. Someone who can talk confidently about an incredible bottle without making wine feel intimidating, have some banter with a table and get the wider team excited about what they're pouring.
You'll ideally be:
A Sommelier or Assistant Head Sommelier ready for your next step
Confident across wine service, cellar management and list maintenance
Hungry to learn, develop and put your own stamp on a program
Hands‐on and happy to get stuck into the day‐to‐day
Approachable, engaging and naturally outstanding with guests
Passionate about training and bringing others along with you
Organised enough to balance a busy floor with the operational side of the program
Excited by the opportunity to work closely with an experienced Group Sommelier
