Johnny, Vince & Sam's Ristorante is looking for an experienced Assistant Venue Manager to join our leadership team in Carlton.Required: At least 4 years' restaurant management experience within a busy, high-volume venueSalary: $70,000–$80,000 + superannuation, depending on experienceEmployment Type: Full-time, 38 hours per weekLocation: ******* Lygon Street, Carlton VIC ****Availability: Five days across a seven-day roster, including nights and weekendsJohnny, Vince & Sam's Ristorante is one of Carlton's most recognisable Italian dining destinations.Located in the heart of Lygon Street, the restaurant is known for its lively atmosphere, generous Italian food and warm, family-style hospitality.We are looking for an experienced hospitality leader who can work closely with the Venue Manager to oversee daily operations, lead the front-of-house team and maintain consistently high standards across service, people and commercial performance.The RoleThis is a senior, hands-on management position for someone who understands how to lead a busy restaurant from the floor.You will support the Venue Manager across daily operations while taking ownership of shifts, team performance, guest experience, service standards and operational procedures.The successful candidate will be confident managing people, making decisions during service and maintaining control of a fast-paced venue without losing the warmth and personality that define the Johnny, Vince & Sam's experience.What You'll DoSupport the Venue Manager with the overall operation of the restaurantLead busy lunch and dinner services from the floorManage, motivate and support the front-of-house teamCoordinate daily briefings, section allocations and service prioritiesMaintain high standards of customer service, presentation and venue cleanlinessRespond professionally to guest feedback, complaints and service issuesAssist with recruitment, onboarding,
training and employee developmentProvide clear feedback, coaching and performance support to team membersAssist with rostering, labour management and daily staffing requirementsMonitor sales performance and work toward venue budgetsOversee cash handling, till reconciliation and end-of-day proceduresMaintain compliance with RSA, food safety and workplace requirementsSupport stock control, ordering and beverage operationsWork closely with the kitchen leadership team to coordinate serviceStep into broader venue-management responsibilities when requiredWhat You'll BringAt least 4 years' experience in restaurant or hospitality managementExperience working in a busy, high-volume restaurant environmentStrong front-of-house leadership and service-management skillsConfidence managing teams across nights, weekends and peak periodsExperience working with sales, labour or operational budgetsStrong understanding of restaurant procedures and daily venue operationsA current Victorian RSA certificateStrong communication, organisation and problem-solving skillsA practical and hands-on approach to leadershipAbility to make confident decisions during busy servicesAbility to safely perform manual-handling dutiesFull availability across a seven-day roster, including nights and weekendsExperience with cocktails, wine or beverage operations will be highly regarded.WSET knowledge and a current first-aid qualification would also be viewed favourably.Why Join Us?
