The Role

We are seeking a motivated and experienced F&B; Duty Manager to join our dynamic team. Reporting directly to the Director of Food & Beverage, this role is responsible for overseeing the daily operations of our Restaurant, Bar and other F&B; outlets, ensuring exceptional guest experiences, and maintaining high service standards in line with the hotel’s brand.

The successful candidate will be required to:

- Manage day-to-day operations across all F&B; outlets

- Lead, train, and motivate team members to deliver outstanding customer service

- Supervise security arrangements and outlets maintenance

- Ensure legal compliance with health, safety, and hygiene standards

- Monitor service quality and resolve guest concerns in a timely and professional manner

- Assist with rostering, staffing levels, and performance management





- Support cost control initiatives, including stock management and waste minimisation

- Collaborate with the kitchen and events teams to promote all products and ensure seamless service delivery

- Maintain strong product knowledge and promote upselling opportunities to ensure targeted profit achieved

What we are looking for

- Minimum 2 years’ experience in a supervisory or duty manager position within Food and Beverage & Bar operations

- Strong leadership and team management skills

- Excellent communication and interpersonal abilities

- Proven ability to work in a structured, high-volume hospitality environment

- Solid understanding of hospitality operations, including restaurant, bar, and events service

- Ability to work flexible schedule, including evenings, weekends, and public holidays

- Strong organisational and problem-solving skills

- Knowledge of relevant Australian workplace health and safety regulations

- Relevant qualification in Hospitality Management or equivalent practical knowledge and experience

- RSA certification (required)
