About Us
DONG SHI GROUP PTY. LTD., trading as Dave’s Chinese, is a family-run Chinese restaurant located in St Kilda, Victoria. We provide dine-in, takeaway and delivery services and offer a broad range of Chinese and Asian-inspired dishes, including Peking Duck, dim sum, lemon chicken, honey chicken, curry dishes, chow mein and fried rice. Our focus is on preparing fresh, consistent and high-quality food while providing efficient service to our customers.
We are seeking an experienced and motivated Cook to join our kitchen team on a full-time basis.
About the Role
The successful applicant will be responsible for preparing, seasoning and cooking food in accordance with the restaurant’s menu, recipes and quality standards. The role requires the ability to work efficiently in a busy commercial kitchen, maintain food safety standards and coordinate effectively with other kitchen staff during service periods.
The position involves shift work, including lunch and dinner service, and requires availability to work weekdays and weekends, depending on the restaurant's operational requirements.
Key Responsibilities
The successful applicant will be responsible for:
1. Preparing, cutting, marinating and portioning meat, seafood, vegetables and other ingredients for cooking and service.
2. Preparing and cooking Chinese and Asian-style dishes in accordance with established recipes, preparation methods and restaurant standards.
3. Preparing dishes including stir-fries, fried rice, chow mein, curry dishes, meat and seafood dishes and other items featured on the restaurant's menu.
4. Preparing and cooking dishes such as Peking Duck and other specialty dishes in accordance with the restaurant's preparation procedures.
5. Preparing dim sum and other menu items as required by daily service requirements.
6. Examining foodstuffs and ingredients to ensure freshness, quality and suitability before preparation and cooking.
7. Regulating and monitoring temperatures of woks, ovens, grills, fryers and other cooking equipment to ensure food is properly cooked.
8. Seasoning and adjusting food during cooking to achieve the required flavour, consistency and presentation.
9.
Following recipes, portion specifications and established preparation procedures to maintain consistency across dishes.
10. Portioning cooked food appropriately and plating dishes with appropriate sauces, gravies, garnishes and accompaniments.
11. Preparing food to accommodate customer dietary requirements and special requests where required.
12. Maintaining appropriate food preparation levels throughout lunch and dinner service to ensure timely fulfilment of dine-in, takeaway and delivery orders.
13. Monitoring stock levels of food ingredients and notifying management when supplies require replenishment.
14. Storing raw materials, prepared ingredients and cooked food appropriately in refrigerators, freezers and other temperature-controlled facilities.
15. Ensuring food is labelled, dated and stored in accordance with food safety and workplace procedures.
16. Maintaining cleanliness and hygiene of preparation areas, cooking equipment, utensils and work surfaces throughout kitchen operations.
17. Complying with applicable food safety, hygiene and workplace health and safety requirements.
18. Minimising food wastage through appropriate preparation, portion control and storage practices.
19. Working collaboratively with other cooks, kitchen staff and front-of-house staff to coordinate food preparation and service.
20. Communicating effectively with kitchen staff regarding orders, preparation requirements, cooking times and service priorities.
21. Assisting with preparation and organisation of kitchen operations before, during and after service.
22. Assisting with estimating daily ingredient requirements and preparation quantities based on expected customer demand.
23. Assisting with maintaining consistent food quality, presentation and portion sizes across all services.
24. Performing other reasonable cooking and kitchen duties associated with the operation of a commercial restaurant.
Skills and Experience
To be successful in this position, applicants should have:
1. AQF Certificate IV in Cookery, Commercial Cookery or a closely related qualification, or equivalent relevant qualifications and experience.
2. At least one year of relevant experience working in a commercial kitchen.
3. Demonstrated experience preparing and cooking Chinese or Asian-style cuisine is highly desirable.
4. Sound knowledge of food preparation, cooking techniques, seasoning and presentation.
5. Ability to operate commercial kitchen equipment safely and efficiently.
6. Knowledge of food safety, hygiene and safe food storage procedures.
7. Ability to work efficiently under pressure during busy lunch and dinner service periods.
8. Ability to follow recipes, portion controls and established kitchen procedures.
9. Strong attention to food quality, consistency and presentation.
10. Ability to work independently as well as effectively within a kitchen team.
11. Flexibility to work rotating shifts, including lunch and dinner services.
12. Availability to work weekdays, weekends and public holidays where required by the business.
Language Skills – Additional Advantage
The ability to speak and read Mandarin is highly regarded as an added advantage, as Mandarin communication skills may assist the successful applicant in communicating efficiently with other kitchen team members and understanding kitchen instructions, preparation requirements and food-related information.
