About the Venue
Located within the prestigious Brighton Hotel – MGallery Collection precinct in Brighton‐Le‐Sands (just 25 minutes from Sydney CBD), this new premium fine dining restaurant is set to become a flagship hospitality destination on Sydney's southern coastline.
Positioned within a growing hospitality precinct, the venue will deliver a refined coastal dining experience centred around premium food, exceptional service, and a curated beverage offering.
The restaurant will feature approximately 170 seats, a dedicated private dining room, a striking glass‐fronted wine cellar, and sophisticated interiors designed to create an elevated guest experience.
As a pre‐opening venue, this is a rare opportunity to play a key role in shaping the culinary direction, culture, standards, and operational foundations of a landmark hospitality destination from day one.
About the Role
We are seeking an experienced and passionate Head Chef to lead the opening culinary team of this exciting new premium dining destination.
This is a hands‐on leadership role with full responsibility for the kitchen operation, including menu development and execution, team recruitment and development, food quality, operational standards, and financial performance.
Working closely with the venue's leadership team, you will play a critical role in establishing the culinary identity of the restaurant, building a high‐performing kitchen brigade, and delivering an exceptional and consistent guest experience from opening day.
Key Responsibilities
Lead the pre‐opening kitchen setup, recruitment, menu development, and operational planning




Establish and maintain exceptional food quality, presentation, and service standards
Develop and execute a premium menu aligned with the restaurant's culinary vision and concept
Lead, train, mentor, and develop a high‐performing kitchen brigade
Drive consistency across food preparation, service execution, and quality control
Manage kitchen labour, rostering, stock control, ordering, food costs, and supplier relationships
Drive kitchen efficiencies while maintaining the highest standards of food quality
Collaborate with the venue leadership team to support the overall commercial and operational success of the restaurant
Ensure compliance with food safety, WHS, and all operational standards
About You
Proven experience as a Head Chef within a premium restaurant, hotel, or fine dining environment
Robust leadership experience with a proven ability to build, lead, and develop high‐performing kitchen teams
Strong understanding of premium food, with experience in steak, seafood, and open‐fire cooking concepts highly regarded
Proven ability to develop and execute high‐quality menus within a premium dining environment
Strong financial and commercial awareness, including food costs, labour management, stock control, and kitchen efficiencies




Exceptional attention to detail and a genuine passion for quality, consistency, and presentation
Hands‐on and proactive leadership approach
Strong organisational, communication, and stakeholder management skills
Ability to perform in a fast‐paced, high‐expectation environment
Flexible availability across a 7‐day roster
