About the role

We are seeking an enthusiastic and knowledgeable Spanish Sommelier and Bar Lead to join our team on a casual or Part -Time basis at our Terrigal location. This is an exciting opportunity to lead our bar operations whilst sharing your expertise in Spanish wines and beverages with our guests. In this role, you will be instrumental in curating exceptional drink experiences, educating our team and patrons, and maintaining the highest standards of bar service. Your passion for Spanish beverages and natural leadership skills will help us deliver outstanding hospitality that keeps guests coming back.

Key responsibilities

- Making cocktails, pouring wines and leading bar staff during shifts, ensuring seamless service delivery and maintaining high standards of professionalism

- Providing expert recommendations on Spanish wines, sherries, cocktails, vermouths, spirits and other beverages to enhance guests' dining experiences

- Designing and updating our beverage menu with a focus on Spanish selections, ensuring variety and quality

- Training and mentoring bar team members on Spanish beverages, tasting profiles, food pairings and service techniques

- Managing bar inventory, stock rotation and ordering of beverages in accordance with company procedures

- Preparing and serving cocktails, wines and other drinks with precision and consistency

- Engaging with guests to understand their preferences and delivering personalised beverage recommendations

- Maintaining cleanliness, organisation and safety standards throughout the bar area





- Handling cash and card transactions accurately and securely

- Assisting with promotional events and special beverage tastings as required

- Waiting tables, attending to guests at the host desk and taking payments

What we're looking for

- Proven experience working as a sommelier or in a senior bar position, with substantial knowledge of Spanish wines and beverages

- Robust leadership and team management capabilities with the ability to motivate and mentor bar staff

- Excellent customer service skills with the ability to engage guests and provide expert beverage guidance

- In-depth knowledge of Spanish wine regions, varietals, production methods and food pairing principles

- Proficiency in mixing and serving cocktails to a high standard

- Sound knowledge of responsible service of alcohol and venue liquor laws

- Strong organisational and inventory management skills

- Ability to work efficiently in a fast-paced hospitality environment

- Excellent communication skills and a friendly, professional demeanour

- Fluency in Spanish is highly desirable

- Relevant certifications such as Wine and Spirit Education Trust (WSET) Level 2 or higher, or equivalent sommelier qualifications, are preferred
