The Pillars

New South Wales

Highly competitive pay & tips | Full ownership of a world-class beverage program | A career-defining leadership role

A beverage program isn't just a list of drinks — it's a philosophy, built pour by pour and decision by decision. At The Pillars, that philosophy becomes something our members carry with them long after they've left the room — and our Beverage Manager is the one who builds that experience from the ground up.

Tucked in the heart of Sydney's CBD, The Pillars is a private members' club built for Australia's leaders, innovators and entrepreneurs. Across our restaurant, lounge, bar and event spaces, we deliver hospitality that's personal, precise and unmistakably ours — where a genuine connection matters just as much as a perfectly balanced cocktail.

We're looking for a Beverage Manager who's ready to own the program end-to-end — someone with the palate to set the standard, the commercial instinct to make it sustainable, and the leadership to bring a team along with them.

THE ROLE

Highly competitive pay rates & tips

Full ownership of a world-class, evolving beverage program

A genuine leadership seat within a professional, growing
team

You’ll set the direction for our beverage offering — from cocktail and wine list design through to supplier relationships, cost control and stock management — owning the P&L; and COGS for the beverage department, while recruiting, training and leading the bar team day to day.

REPORTING & COLLABORATION

This role reports to the Venue Manager and sits at the centre of the floor — working closely with our other heads of department, including Membership, Marketing, Events and Kitchen,

to make sure the beverage program supports every part of the member experience.
Whether it's tailoring drinks for a private function, aligning with a seasonal food menu, or shaping the beverage side of a brand event, you'll be the one at the table representing beverage in those conversations.

WHAT WE'RE LOOKING FOR

At least 2 years' experience in a similar beverage management
role

A proven ability to design and evolve a cocktail and wine
program from concept through to execution

Strong commercial acumen — full ownership of P&L; and COGS
for the beverage department, including stock control, supplier relationships and margin management

Experience recruiting, training and leading a bar team

Deep, confident knowledge across spirits, cocktails and wine

A track record of maintaining consistency and standards under
pressure, in a luxury setting

Excellent communication and leadership skills, with the presence
to represent the venue to members and suppliers alike

Confidence and fluency in RSA procedures and broader compliance
requirements

A hands-on, team-first mindset — leading from behind the
bar, not just from the office

A NICE-TO-HAVE

Formal wine education — WSET Level 2 or above, sommelier training,

or equivalent — is a genuine advantage for this role. You'll have real scope to shape our wine list alongside the cocktail program, and a qualification like this means you can hit the ground running.

Above all, you understand that in a private members' workplace, discretion, consistency and service aren't just expectations — they're everything, and as the leader of our beverage program, you set that tone for the entire team.

WHAT WE OFFER

Genuinely competitive pay and tip rates, reflecting the seniority of the role

A seat inside one of Sydney's most distinctive hospitality experiences

A calendar of industry perks and experiences, on top of the everyday

Shift patterns built around real life, not just a roster

Full ownership of a growing beverage program — your vision, on the menu

A genuine leadership pathway toward venue-level management

WHY THE PILLARS

This is your chance to lead within one of Sydney's most distinctive private member environments. You'll work across beautifully designed spaces — full-service bars, lounges, our restaurant and rooftop event areas — with real exposure to exclusive member experiences, private functions and brand events, and full ownership over how our beverage program evolves.

You'll be backed by a team that takes hospitality seriously: professional development, craft, and creating experiences members genuinely remember.

If you're a beverage professional who’s ready to lead a program from the ground up, takes pride in your craft, and wants to be part of something a little different, we’d love to hear from you.
