We are currently seeking an experienced, passionate and commercially focused Food & Beverage Manager to lead our Food & Beverage operations on a full-time basis.

You will take ownership of the day-to-day and strategic operation of our restaurant, bar, room service and conference & events/banqueting operations, leading the team to deliver exceptional guest experiences while achieving strong financial and operational results.

- Lead, motivate and develop the Food & Beverage team to deliver exceptional guest service and achieve Total Customer Satisfaction.
- Oversee daily operations across restaurant, bar, room service and conference & events.
- Drive Food & Beverage revenue through innovative initiatives, promotions and effective upselling strategies.
- Manage departmental labour, costs, productivity and overall financial performance.
- Work closely with the Executive Chef and hotel leadership team to achieve operational and business objectives.
- Ensure effective rostering and staffing levels in line with business requirements.
- Recruit, train, coach and develop team members while building a positive and high-performing culture.
- Maintain strong relationships with VIP, regular and returning guests.




- Manage guest feedback, service recovery and escalations professionally and efficiently.
- Ensure compliance with food safety, hygiene, RSA, WHS and Accor brand standards.
- Monitor departmental performance and identify opportunities for continuous improvement.
- Support conference, event and banqueting operations to ensure seamless service delivery.
- Maintain high standards of presentation, service quality and operational consistency.
- Act as a key member of the hotel's emergency response team when required.

Qualifications

To be successful in this role, you will ideally have:
- Previous experience as a Food & Beverage Manager, Assistant Food & Beverage Manager or senior F&B; leader within a hotel or similar hospitality environment.
- Strong leadership and people-management skills.
- Demonstrated experience managing restaurant, bar and event/banqueting operations.
- Strong commercial awareness with experience in revenue generation, labour management and cost control.
- Excellent communication, organisation and problem-solving skills.
- A hands-on leadership style with a genuine passion for guest service.
- Ability to coach, motivate and develop a diverse team.
- Strong attention to detail and professional presentation.
- Valid NSW RSA.
- Flexibility to work across a rotating roster including evenings, weekends and public holidays.
- Full working rights in Australia.
