About the Role
Gishi Pty Ltd is seeking an experiencedAssistant Restaurant Managerto join our team in Melbourne VIC ****.
This is a full-time position offering an exciting opportunity to be part of a premium Japanese dining establishment and Listening Bar.
Working closely with the Restaurant Manager and senior management team, the Assistant Restaurant Manager will play an important role in overseeing day‐to‐day operations, leading the front‐of‐house team and ensuring consistently exceptional service standards.
The ideal candidate will have a genuine passion for hospitality, strong leadership skills and a commitment to delivering an authentic, refined Japanese dining experience.
Key Responsibilities
Leadership & Team Management
Support the Restaurant Manager in leading, mentoring and developing the front‐of‐house team.
Lead the team during service and ensure staff are confident, professional and well presented.
Assist with recruiting, onboarding and training new employees.
Conduct pre‐service team briefings and communicate daily operational priorities.
Foster a positive, respectful and accountable workplace culture.
Assist with preparing and managing weekly staff rosters.
Monitor staffing levels and assist with adjusting team requirements according to business needs.
Support performance management and provide constructive feedback to team members.
Restaurant Operations
Assist with the smooth operation of all daily restaurant services.
Take a hands‐on leadership role during lunch and dinner service.
Ensure high standards of cleanliness, presentation and organisation are maintained.
Monitor service standards and staff productivity.
Assist in managing labour costs and operational efficiency.
Ensure compliance with Food Safety, RSA and Workplace Health & Safety requirements.
Assist with opening and closing procedures.
Support the Restaurant Manager in maintaining consistent operational standards across the venue.
Guest Experience
Deliver exceptional, attentive and personalised hospitality.




Build robust relationships with regular guests and contribute to guest retention.
Handle guest feedback and service issues professionally and effectively.
Assist with reservations, seating and service flow.
Monitor the guest experience throughout service and proactively resolve issues.
Ensure every guest receives a memorable and seamless dining experience.
Financial & Administrative
Assist the Restaurant Manager with monitoring daily sales and operational performance.
Support budgeting, labour management and cost‐control initiatives.
Assist with inventory management and stock ordering.
Participate in regular stocktakes and help minimise waste.
Review daily operational reports and identify areas for improvement.
Support the achievement of financial and operational KPIs.
Beverage & Product Knowledge
Develop a strong understanding of the restaurant's food and beverage programme.
Confidently promote premium sake, Japanese whisky, wine and cocktails.
Maintain excellent knowledge of the menu and beverage offering.
Assist with training staff on food, beverage and service knowledge.
Support seasonal menu launches, events and special functions.
Business Development
Contribute to guest retention and repeat visitation.
Assist with promotional campaigns, events and community engagement.
Work closely with management to improve service, sales and profitability.
Identify opportunities to enhance the guest experience and operational performance.
Represent the venue professionally and contribute to building its reputation within Melbourne's hospitality industry.
What We're Looking For
Minimum2–3 years' experience in an Assistant Manager, Supervisor or senior hospitality role.




Strong leadership and people‐management skills.
Excellent communication and organisational abilities.
A hands‐on approach and ability to lead by example during busy services.
Proven experience working in a high‐quality restaurant or premium hospitality environment.
Understanding of labour, stock and operational cost control.
Passion for exceptional hospitality and guest service.
Experience using reservation and POS systems.
Knowledge of Japanese cuisine and beverages is highly regarded but not essential.
Current Victorian RSA certificate.
Food Safety Supervisor certification is advantageous.
Professional presentation and a genuine passion for hospitality.
