Roles and responsibilities include:
Curating and ongoing development of cocktail menu
Ensure compliance and RSA standards are maintained
Daily operation of Venue including opening and closing reporting and cash up procedures
Oversee customer service throughout peak trade
Recruitment, induction and training of staff
Create and implement staff incentives
Implement and maintain customer service standards in all bars
Manage the cellar, ordering of stock and conducting monthly stocktake
Manage stock take variances and implement control systems
Wages, forecasting and controls of wage costs and percentage
