Job Description
The Trustee for RAMIA RESTAURANT TRUST Fishermen's Pier is seeking an experienced and passionate Chef to join our dynamic kitchen team at our iconic waterfront seafood restaurant. Renowned for delivering high-quality seafood dishes, seasonal menus, and exceptional dining experiences, we are looking for a motivated professional who is committed to culinary excellence and thrives in a fast-paced hospitality environment. The successful applicant will play a key role in maintaining our high standards of food quality, presentation, and kitchen operations while contributing to the ongoing success of the restaurant.
Key Responsibilities
Plan, prepare, cook and present a wide range of high-quality dishes, with a strong focus on fresh seafood, modern Australian cuisine and seasonal ingredients. Develop and contribute to menus and daily specials that reflect customer preferences and seasonal produce. Monitor the quality of ingredients and finished dishes to ensure consistency, freshness and presentation standards.
Prepare seafood, meat, poultry and other ingredients using appropriate cooking methods and techniques. Supervise food preparation processes and ensure effective kitchen operations during service periods. Train, mentor and assist kitchen staff in food preparation, cooking techniques, food safety and quality standards.
Monitor stock levels, assist with ordering food supplies and minimise wastage through effective inventory control.
Ensure all food is prepared and stored in accordance with food safety legislation and hygiene requirements. Maintain a clean, organised and safe kitchen environment and ensure compliance with workplace health and safety procedures.
Work collaboratively with the management and front-of-house team to deliver an exceptional dining experience.
Essential Requirements
Relevant qualification in Commercial Cookery or equivalent. At least two years of relevant full-time experience as a Chef (or equivalent combination of qualifications and experience).
Demonstrated experience preparing and presenting high-quality seafood and contemporary Australian cuisine. Sound knowledge of food preparation techniques, menu planning, stock control and kitchen operations. Robust understanding of food safety, HACCP principles and workplace health and safety requirements.
Ability to work efficiently under pressure in a busy restaurant environment. Excellent organisational, communication and teamwork skills. Flexibility to work weekends, evenings and public holidays as required.
Salary
Salary: $80,000 per annum plus applicable superannuation.
