Job Description

RS Foundations Pty Ltd We are seeking a qualified and experienced Chef to join our team at Berrikos Carrum on a full-time, ongoing basis. The successful candidate will be responsible for planning and organising food preparation and cooking activities, preparing and cooking a variety of dishes across breakfast, lunch and dinner service, and maintaining consistent standards of food quality, presentation, hygiene and safety.

The role requires someone who can work efficiently in a busy commercial kitchen, coordinate kitchen activities during service periods, monitor food quality and presentation, and provide guidance to Cooks and other kitchen staff. The Chef will work collaboratively with management, the kitchen team and front-of-house staff to support efficient day-to-day kitchen operations. To be successful in this role, you will have a relevant commercial cookery or culinary qualification and relevant experience working as a Chef in a commercial kitchen setting.

You will have strong knowledge of food preparation and cooking techniques, menu planning, food safety and hygiene requirements, stock control and kitchen operations, together with the ability to consistently deliver high-quality food in a fast-paced environment. This is a full time, ongoing position based at Berrikos Carrum, 501A Station Street, Carrum VIC. - Plan and develop menus in consultation with management, taking into account customer preferences,



seasonal availability, food costs and operational requirements.
- Prepare and cook a wide range of dishes in accordance with recipes, quality and presentation standards.
- Plan and organise food preparation and cooking activities to ensure efficient and timely service.
- Monitor the quality of dishes at all stages of preparation and presentation.
- Determine food requirements, portion sizes and preparation quantities based on menu and service requirements.
- Estimate food and labour costs and assist in maintaining appropriate portion control and minimising food wastage.
- Determine stock requirements and order food supplies as required for kitchen operations.
- Inspect ingredients and food supplies to ensure appropriate quality and freshness.
- Supervise and provide guidance to Cooks and other kitchen staff in food preparation, cooking techniques and presentation.
- Demonstrate cooking techniques and advise kitchen staff on appropriate food preparation and cooking procedures.
- Prepare and oversee the preparation of meals for customers with dietary requirements, allergies and special requests.
- Ensure food is appropriately stored and handled in accordance with food safety and temperature-control requirements.
- Ensure compliance with food safety, hygiene and safe food-handling requirements within the kitchen.
- Assist with training Cooks and other kitchen staff in food preparation, cooking,



presentation and kitchen procedures.
- Liaise with management and front-of-house staff regarding food preparation, service requirements and food quality.

Qualification & experience Relevant qualification in Commercial Cookery, Culinary Arts or a related field. Minimum 1 year of relevant experience working as a Chef in a commercial kitchen environment. Strong knowledge of food preparation, cooking techniques, portion control and food presentation.

Experience in planning and organising food preparation and cooking activities in a commercial kitchen. Sound knowledge of menu planning, food costing, stock control and kitchen operations. Strong knowledge of food safety, hygiene and safe food-handling requirements.

Ability to monitor food quality and maintain consistent cooking and presentation standards. Ability to provide guidance and direction to Cooks and other kitchen staff. Ability to work efficiently and organise kitchen activities during busy service periods.

Good communication, organisational and teamwork skills. About Company Berrikos is a Melbourne-based hospitality group and operated by RS Foundations Pty Ltd, with venues in Dandenong, Ormond and Carrum. Our Carrum venue, located at 501A Station Street, is an all-day dining venue offering breakfast, lunch and dinner.
