The Chance

This is not just another restaurant leadership role. We are seeking an exceptional hospitality leader to take ownership of Nobu Melbourne, one of Melbourne’s most recognised dining destinations.



Reporting to the Head of Premium Dining, you will be the entrepreneurial leader, cultural ambassador and commercial driver of one of Crown Melbourne's flagship venues. As General Manager, you will have full accountability for the venue's performance, reputation and future success. This is a rare opportunity to influence the next chapter of Nobu Melbourne, driving its evolution as a world-class dining destination where every guest feels like a VIP and every team member contributes to an exceptional culture. You will be equally comfortable leading service on the floor as you are analysing financial performance, building strategic partnerships, developing future leaders and delivering strong commercial outcomes. Working closely with both Front of House and Culinary teams, you will create a truly unified culture focused on excellence, innovation and memorable guest experiences.
