Operations Manager – Foys Kirribilli & Flying Bear Cafe

Location: Sydney Flying Squadron
Reports to: Venue Manager
Salary: $85,000 - $95,000 (based on experience)

The Role
We’re seeking a hands‑on Operations Manager who leads from the front and builds the engine room behind the scenes.
This is a backend operational role focused on creating the structure, systems, and discipline that enable a seamless guest experience. You’ll drive labour control, stock integrity, compliance, and team performance, working closely with the Head Chef and Venue Manager to ensure every shift runs smoothly, professionally, and with genuine warmth on the floor.
You bring commercial awareness, attention to detail, and quiet confidence, never losing sight of the guest.
Key Responsibilities
Operations Management
- Execute daily, weekly, and monthly management checklists
- Manage labour budgets and rostering in line with targets
- Maintain beverage COGS and implement strong stock controls
- Lead weekly reporting and forecasting
- Approve timesheets and ensure award compliance
- Oversee stocktakes, cellar organisation, and inventory accuracy
- Ensure POS accuracy and live menu updates
- Maintain the venue maintenance log and liaise with the Club on capital works
- Collaborate with Marketing to execute campaigns and ensure operational readiness
- Oversee event operations, including preparation and delivery
- Maintain par levels for replacements, consumables, and chemicals
- Ensure WHS controls are in place and conduct regular venue audits
Service, Leadership & Quality Control
- Work closely with the Head Chef to align product quality and timing
- Lead from the floor on rostered shifts, modelling exceptional service
- Uphold presentation, cleanliness, and sequence of service standards
- Oversee onboarding and structured orientation
- Enforce grooming and uniform standards
- Deliver service or WHS compliance training
- Foster a culture of professionalism, respect, and accountability
About You
- Minimum 3 years’ experience in a similar Operations or senior FOH role
- Strong food & beverage knowledge
- Sound stock management experience - Lightspeed users to the front
- Detail-driven across service, cleanliness, and back-of-house procedures
- Proven ability to manage labour and meet financial targets
- Calm, solutions-focused, and confident under pressure
- A natural leader who builds high-performing, engaged teams
- Passionate about guest experience and community venues
- You’re commercially aware, people-focused, and grounded. You understand club culture — members, locals, and visitors alike — and know how to make everyone feel welcome.
