Swillhouse is seeking Bartenders to join its collection of iconic bars, including The Baxter Inn, Shady Pines Saloon, Caterpillar Club and Curtains. This role is ideal for a hospitality professional with strong cocktail and spirits knowledge who thrives in busy service environments, values craftsmanship and attention to detail, and enjoys creating memorable guest experiences.

About the Role

As a Bartender within Swillhouse, you’ll help deliver the distinct experience that makes each of our venues memorable. From classic cocktails and premium spirits to late-night energy and exceptional service, you’ll combine technical skill with genuine hospitality.

- Prepare and serve cocktails, spirits, wine and beer with consistency and attention to detail
- Deliver knowledgeable, engaging service tailored to each guest and venue
- Confidently guide guests through menus and beverage selections




- Maintain exceptional presentation and organisation behind the bar
- Work effectively during busy service periods while maintaining quality and composure
- Contribute to the atmosphere and identity of the venue through your presence and professionalism
- Support venue training initiatives and continuously develop your product knowledge
- Collaborate with your team to deliver a seamless guest experience

About You

You’re passionate about hospitality and take pride in your craft. You enjoy learning, thrive in busy environments and understand the importance of both technical skill and guest connection.

- Experience working in cocktail bars, restaurants or premium hospitality venues
- Strong understanding of classic cocktails, spirits and beverage service
- Curiosity and enthusiasm for learning about products, techniques and hospitality
- Skilled, reliable and highly organised
- Calm and composed under pressure
- Excellent communication and interpersonal skills
- Strong attention to detail and commitment to high standards
- Positive, team-first attitude and willingness to contribute wherever needed
