House of Bungalow opens in Surry Hills later this year - a daytime café, an elevated restaurant and a late-night basement, all under one roof. The cooking is modern Spanish × Asian: produce-driven and precise.
We're hiring Chefs de Partie for the opening brigade, and each of you will own a section outright.
The role
Your section is yours. Mise en place must be accurate and finished before the doors open, dishes must meet recipe and presentation standards every single time. Run the section cleanly through a full book, maintaining your own timing, communicating clearly to the pass, and handing over properly at the end of the shift.
You'll look after portioning, yield, rotation, storage and waste in your section, check what comes into it, bring on the junior chefs working alongside you, and put ideas forward for specials and menu development.
Reporting to the Sous Chef and Head Chef.
What we're looking for
- 2–3+ years in skilled kitchens, including running a section unsupervised through a busy service
- Certificate III or IV in Commercial Cookery, and a food safety handling certificate
- Real strength in mise en place and staying organised when the volume hits
- Some experience training and setting the standard for junior chefs
- Full Australian working rights, and availability across days, evenings and weekends
Experience with live-fire or grill work, hatted or premium-casual venues, shared plates, Spanish or Asian cuisine, or opening a new venue is a real plus.
What we offer
