Job Summary:
Brunetti Oro is seeking expereinced and passionate pastry chefs to join our morning team.
The Brunetti Oro Danish Pastry Team are on the look out for an experienced, hands-on, and knowledgable Demi Chef who demonstrates a flare for the creative, based in solid training, knoweldge, and expereince of Danish pastry.
The successful candidate will demonstrate product knowledge, baking technique, hands-on skill, and understanding of ingredient, and flavor combinations.
They will have the ability to follow, and give direction, respect recipe integrity, and established processes, deliver superior quality porducts, and meet production scheuldule while maintining quality assurance.
Demonstrated awareness of OHS and food safety standards is non-negotiable, as is hands-on experience laminating Danish, croissants and donuts.
Candidates with 3+ years Danish experience are preferred but exceptional candidates with 2 years experience may be considered. Please do not apply for this position without the required Danish experience.
Candidates applying for the Demi Chef role in our Danish Pastry Team require the ability to work Sunday - Thursday 4am - 12pm, (Sunday 3.30am-10am).
Brunetti Oro is also seeking experienced Pastry Chef's to join our morning Cake Production Team. The ideal candidates will have a passion for pastry and creating delicious baked goods, they also require availability to work Saturday 3.30am - 10am and undertake a weekday shift commencing 4am -12pm.
All roles require someone with significant baking experience, with high volume production experience advantageous. Strong attention to detail, and the ability to work efficiently in a team setting and/or using their own initiative is required.
The Brunetti Oro Pastry Chef role will suit an experienced Pastry Chef with experience preparing a wide range of individual and celebration cakes, mousse cakes, baked goods and desserts, with a background in mass production and operating in a production facility.
The successful candidate must be familiar with a variety of ingredients and recipes. They may also supervise and train other staff and are required to stay up-to-date with industry trends to innovate and enhance the Brunetti Oro offering. Attention to detail, creativity, and the ability to work efficiently under pressure are essential traits.
Departments that require coverage are as below:
- Danish 2 x full-time roles
- Cake Production - 2 x full-time roles
Qualifications:
- Proven experience as a pastry chef or in a similar role.
- Strong knowledge of baking techniques, pastry preparation, and decoration.
- Creativity and attention to detail in dessert design and presentation.
- Ability to work efficiently in a fast-paced environment.
- Knowledge of food safety and sanitation standards.
- Strong organizational and time management skills.
- Excellent communication and teamwork skills
Responsibilities include:
- Demonstrating knowledge and confidence in production of various individual and celebration cakes, including mousse cakes, novelties and wedding cakes. For Danish department knowledge and confidence with pastries, Danishes, croissants, novelties, filling, and Italian pastries.
- Demonstrating the necessary skills to finish and decorate cakes using various techniques like hand masking, glazing, spraying, novelties, and wedding cakes as required.
- Providing functional assistance in the production team demonstrating superior standards of preparation, production and finishing within your specialized field
- Implementing superior standards of preparation and production within the department demonstrating and utilizing your pastry skills, experience and knowledge gained from previous roles and qualifications
- Contribute to the fulfillment of production schedules and targets, ensuring all products are prepared to the Brunetti Oro standard, demonstrating organizational skills and superior attention to detail
- Building and maintain productive working relationships with team members and foster a respectful, productive and collegial working environment and culture
- Adopting a ‘hand’s on' approach to work, leading by example and demonstrating initiative and ability to work within a fast-paced workplace
- Collaborating with the team to innovate and develop new products and menu offerings
- Demonstrate control in food preparation and managing wastage levels
