The Role

We are seeking an experienced and passionate Bar Manager to lead the bar operations at our Bondi venue. In this role, you will oversee the daily running of all bar areas, ensuring exceptional beverage quality, service standards and team performance. You will play a key role in delivering the Chotto Matte's bar experience, managing staff training, stock control, ordering and maintaining profitability while ensuring guests receive an outstanding experience every time.

Working closely with the General Manager and other department leaders, you will help ensure seamless service across the restaurant and bar.

Key Responsibilities

- Lead, manage and support the bar team on a daily basis

- Ensure all beverages meet Chotto Matte’s quality, preparation and presentation standards





- Oversee cocktail preparation and ensure bar areas are fully prepared for service

- Manage bar inventory, ordering and stock control

- Monitor garnishes, portions and presentation standards

- Assist with budget management and payroll cost control

- Ensure efficient service and communication between bar and floor teams

- Recruit, train and develop bar staff, including performance reviews and coaching

- Maintain compliance with licensing laws and company policies

- Ensure all health, safety and sanitation standards are consistently met

- Foster a positive team culture that promotes productivity and guest satisfaction

About You

- Minimum 3 years’ experience in bar or restaurant management

- Robust leadership and team management skills

- Excellent organisational and communication abilities

- Confident managing high-volume service environments

- Strong knowledge of health, safety and licensing requirements

- Passion for hospitality, cocktails and delivering exceptional guest experiences

- Positive, energetic and solution-focused approach
