Sous Chef | Cà Phê Mai, Double Bay

Cà Phê Mai is a contemporary Vietnamese cafe by day and a casual wine bar by night, on Kiaora Lane in Double Bay. Mornings run on specialty coffee and bánh mì; evenings turn over to small plates, a serious natural-leaning wine list and a room that gets loud in a positive way. The food is Vietnamese in flavour and instinct, not a greatest-hits menu - a phở gà built on a forty-year family recipe, chicken stock simmered fresh every single day, Wagyu grilled in betel leaf, herbs in volume.

We're hiring a Sous Chef to run the kitchen day to day alongside our Head Chef.

The role

This is the second seat in the kitchen, and it's an operator's job. The Head Chef owns the menu, the produce and the standard on the plate. You own everything that makes that possible:

- Ordering and supplier management, receiving, stock control
- The kitchen roster and prep systems across a split day/night operation
- Food safety and cleaning schedules, kept properly, not for show
- Running the pass on services the Head Chef isn't on




- Developing the cooks under you and holding spec when it's busy

You'll open, run and close services on your own keys. When the Head Chef is off, nothing slips.

About you

- You've held a sous or strong senior CDP role in a quality kitchen and you're ready to own operations, not just a section
- You've done ordering and rostering before, or you're hungry to make them yours
- You keep a clean section and a cleaner BOH.
- You like the discipline of a small kitchen: no hiding, everything matters, Tuesday lunch cooked with the same care as Saturday night
- An interest in Vietnamese food helps; good hands and good habits matter more

What we offer

- $85,000–$95,000 + super, depending on experience
- A genuine 45-hour working week - rostered honestly, not a 60-hour week dressed up as a salary
