We are currently seeking for a
Sous Chef
.
This role offers a balance of hands‐on preparation of high‐quality dishes and operational responsibility for supervising and directing all kitchen personnel.
In this role, you will be responsible for:
Utilising the staff and resources available, organise and facilitate the highest possible standards of food service.
Creates and costs menu items within guidelines established by the Executive Chef whilst keeping in line with current trends.
Actively promotes specialty dishes based on ingredients and/or season.
Use local produce where available to create innovative menus.
Encourage transparent communication lines and forums between all personnel.




Train and mentor line staff including Apprentices and Trainees.
To be successful in this role, you must have:
Successfully completed a trade qualification in commercial cookery;
Previous experience in a fine dining, resort/hotel based restaurant;
Previous experience in a supervisory role, preferably at Sous level;
Experience in Italian Cuisine and fine dining venue (highly regarded);
Strong interpersonal and communication skills;
Must have thorough knowledge of security, health and safety requirements in a commercial kitchen environment.
