Lead a high-performing kitchen in a fast-paced fine dining venue on the Noosa River

Responsibilities

- Leading from the front in a hands-on role, ensuring consistent quality, plating and presentation
- Designing and delivering menus, specials and recipes aligned with Gusto's French/Italian philosophy and local-produce focus
- Managing rostering, staffing and service execution in line with bookings and forecasts
- Controlling food and wage costs through ordering, prep planning, stock control and scheduling
- Recruiting and coaching kitchen staff to build a positive, high-performing culture
- Overseeing BOH operations, supplier relationships, food safety compliance, and kitchen policies/procedures




- Supporting financial planning and functions/events development, including packages and guest issue resolution

Requirements

- Minimum 4 years' experience as a Head Chef (or equivalent senior leadership)
- Strong capability in French and Italian techniques, with a focus on fresh seafood
- Proven experience managing costs, rosters, team performance and BOH operations
- Confident communicator and leader who can train, motivate and build a strong culture
- Sound understanding of food safety legislation and compliance standards
