Planning menus in consultation with management, taking into account seasonal ingredients, customer preferences and operational requirements.
Estimating food and labour costs and assisting with the control of kitchen expenditure.
Selecting, ordering and inspecting food ingredients and kitchen supplies.
Checking the quality and freshness of ingredients received from suppliers.
Preparing, seasoning, cooking and presenting a variety of dishes in accordance with established recipes and quality standards.
Monitoring the quality of dishes at all stages of preparation and presentation.
Ensuring meals are prepared consistently and presented to the required standard.
Coordinating food preparation and cooking activities during service periods.
Regulating the temperature of ovens, grills, cooktops and other cooking equipment.
Preparing meals to accommodate dietary requirements and special customer requests.
Demonstrating cooking techniques and providing guidance to cooks and other kitchen staff.
Training and supervising kitchen staff where required.
Monitoring portion sizes and reducing food wastage.
Monitoring stock levels and ensuring food is stored, labelled and rotated correctly.
Maintaining high standards of cleanliness, hygiene and food safety throughout the kitchen.
Ensuring compliance with applicable food safety, workplace health and safety and sanitation requirements.
Assisting with the development of new dishes and seasonal menu items.
Reporting equipment faults, maintenance issues and food safety concerns to management.
Performing other reasonable duties consistent with the role of a Chef.
Qualifications and Experience
The successful applicant should have:
A relevant qualification in Commercial Cookery or a related field.
At least 1 years of relevant commercial kitchen experience.
Demonstrated experience working as a Chef in a busy commercial kitchen.
Robust knowledge of food preparation, cooking methods, menu planning and food presentation.
A sound understanding of food safety, hygiene and stock-control requirements.
The ability to coordinate kitchen activities and work efficiently during busy service periods.
Strong communication, organisational and time-management skills.
The ability to supervise and support other kitchen staff.
A reliable and professional approach to work.
Availability to work evenings, weekends and public holidays as required.
What We Offer
A full-time position with a salary of $80,000–$82,000 per annum plus superannuation.
