About the role
D'Orsogna Limited is seeking an experienced Boning Room 2IC to join our team at our Palmyra facility in WA ****.
This is a full-time position that plays a crucial role in the day-to-day operations of our boning room.
As the second-in-command, you will support the Boning Room Supervisor in managing production schedules, maintaining quality standards, and ensuring the smooth operation of our boning facilities.
This position is essential to our manufacturing and processing operations, directly impacting product quality and production efficiency.
What you'll be doing
As Boning Room 2IC, your key responsibilities will include:
Assisting the Boning Room Supervisor in overseeing daily boning room operations and production schedules
Supervising and coordinating the work of boning room staff to ensure quality standards are maintained
Monitoring production output and ensuring targets are met within established timeframes
Conducting quality checks on processed meat products to ensure compliance with company standards and food safety regulations
Providing guidance, training and mentoring to team members on proper boning techniques and safety protocols
Maintaining accurate records of production, staff attendance and product traceability
Ensuring compliance with health, safety and hygiene standards throughout the boning room
Identifying and addressing operational challenges and reporting issues to the Boning Room Supervisor
Assisting with staff scheduling and rostering as required
Performing boning room duties as needed to support production schedules
What we're looking for
To succeed in this role, you should have:
Proven experience working in a boning room or similar meat processing environment
Strong supervisory and team leadership skills with the ability to motivate and manage staff effectively
Excellent knowledge of boning techniques, meat processing procedures and food safety standards




Understanding of production targets, scheduling and inventory management
Demonstrated ability to maintain high quality standards and attention to detail
Strong communication skills and the ability to work collaboratively with other departments
Commitment to health and safety compliance in a quick-paced manufacturing environment
Physical fitness and ability to perform manual boning tasks as required
Reliability and the ability to work in a team-oriented culture
Previous supervisory experience in a manufacturing or logistics setting is highly desirable
