Front of House ManagerTrofeo Estate – Dromana, Mornington Peninsula - Permanent, full-time
Trofeo Estate is seeking an experienced and passionate Front of House Manager to lead our Front of House restaurant and Events teams in the Food and Beverage department.
Set amongst 50 acres of scenic vineyards and housed in a beautifully restored ****s building, Trofeo Estate specialises in terracotta-aged wines (Amphora) and are proudly one of the largest producers of terracotta wines in the southern hemisphere and operate a restaurant, cellar door and a busy calendar of events and private functions.
About the Role
You will take full ownership of front‐of‐house operations across our Restaurant and Events, including our casual outdoor dining offers.
This leadership role combines guest‐facing excellence with commercial accountability: you will manage daily operations, drive sales and service KPIs, lead recruitment and training, and work closely with the kitchen and cellar teams to create memorable dining and wine experiences that reflect the quality and character of Trofeo Estate.
Key Responsibilities
Lead, coach and support the Front of House team, including recruitment, onboarding, rostering and ongoing development, to create a positive and high-performing workplace culture.
Deliver exceptional guest experiencesby overseeing bookings, floor plans, service flow and guest interactions, while confidently resolving feedback and ensuring every visit feels welcoming and memorable.
Manage and execute weddings, functions and special events, coordinating staffing, logistics and service delivery to ensure seamless experiences from start to finish.
Drive business performance and wine engagementby monitoring sales, labour and service standards,
while encouraging the team to confidently promote Trofeo Estate's wines and guest experiences.
Oversee daily FOH operations, including POS management, cash handling, stock control, reporting, presentation standards and maintaining a clean, professional environment.
Work closely with kitchen teams to uphold compliance and continuous improvement, ensuring smooth service, strong communication, food safety, RSA requirements and consistently high standards across all guest touchpoints.
About You
Proven experienceas a Front of House Manager, Restaurant Manager or similar senior hospitality role.
Strong commercial focuswith experience managing sales, labour and service KPIs.
Confident leaderwho can motivate, mentor and develop a team.
Experienced in rostering and managing a large pool of casual staff.
Excellent communication, organisational and problem‐solving skills.
Strong food and beverage knowledgeand premium wine knowledge; winery experience is highly desirable.
Up‐to‐date RSA and Food Handlers certificates.
Experience with restaurant software systems(e.g., OpenTable, SevenRooms or similar) is highly advantageous.
Comfortable working varied hours across Thursday–Mondaywith guest‐facing leadership on peak service days.
