You will break down primals, portion, serve the counter, and prep cut runs with pride in a clean, well-presented case.
You should have solid butchery experience, be able to work a boning knife and run a counter without hand-holding, and possess trade qualifications or equivalent hands-on experience.
Knowledge of cuts and ageing is valued.
