Build the opening team at East Pavilion!

Opening in September 2026, East Pavilion is a brand-current, multi-million dollar, 220-seat waterfront restaurant within the iconic Shoal Bay Country Club precinct, directly opposite Shoal Bay Beach.

Inspired by the port cities and coastlines of Asia, East Pavilion celebrates bold, generous Chinese cooking designed to be shared. Wok-fired dishes, premium produce and genuine hospitality come together in a stunning coastal setting, where two coastlines finally meet at one table.

We're looking for an experienced and passionate Sommelier to join our opening team and play a key role in delivering an exceptional dining experience through outstanding wine knowledge, thoughtful recommendations and genuine hospitality.

About The Role

As Sommelier, you'll work closely with our Restaurant Manager and Head Chef to deliver an elevated guest experience through exceptional wine service and premium hospitality.

Key responsibilities:

- Deliver professional wine service and confidently recommend wines to guests.
- Provide thoughtful wine pairings that complement our menu.
- Maintain expert knowledge of wines, spirits and premium beverages.
- Assist with maintaining the wine program, cellar and stock.
- Support the restaurant team to deliver exceptional service throughout every shift.

About You

To be successful in this role, you'll have:

- Previous experience as a Sommelier or in a senior restaurant service role with strong wine knowledge.
- Formal wine qualifications (WSET, CMS or equivalent) are highly regarded.
- A current NSW RSA.




- Exceptional communication skills and a genuine passion for hospitality.
- Availability to work evenings, weekends and public holidays.
