Indian Biryani Restaurant, a hospitality company specialising in authentic Indian cuisine, is expanding with branches in Sydney, Newcastle and Canberra. We’re now hiring a location at Dickson, Canberra 2607, Australia. The restaurant is renowned for its traditional Hyderabadi biryani and complementary Indian dishes crafted with quality ingredients and consistent flavours. This full-time, on-site Indian chef role is based in Canberra. You’ll be responsible for preparing and cooking a variety of Indian dishes, with a strong focus on curries, tandoori items and regional specialties. Your day-to-day tasks will include menu planning, mise en place organisation, managing cooking processes, ensuring portion control and presenting dishes to restaurant standards. You’ll also maintain kitchen cleanliness, adhere to food safety regulations, manage inventory and order ingredients and coordinate with other kitchen and service staff. Additionally, you’ll contribute to developing new recipes,



maintaining consistent taste and quality and supporting a positive respectful workplace.

Qualifications:

- Strong expertise in Indian cuisine, particularly Hyderabadi cuisine preparation, curries and tandoori cooking methods.
- Proficiency in kitchen operations including mise en place, food preparation, cooking techniques and plating.
- Knowledge of food safety, hygiene standards and safe handling and storage of ingredients.
- Experience with inventory control, portion management and minimising food waste.
- Ability to work efficiently in a fast-paced environment and coordinate with a team during peak service hours.

Excellent communication skills and the ability to follow and give explicit instructions are essential. Previous experience as an Indian chef or cook in a restaurant is highly desirable. Australian residency is mandatory. Culinary training or certification in commercial cookery or a related field is a plus. Flexibility is key; you’ll need to work evenings weekends and holidays as needed. A commitment to a respectful inclusive and non-discriminatory work environment is also important.
