Lead the kitchen at one of Victoria's most iconic coastal pubs. Apollo Bay Hotel is looking for an experienced Sous Chef to join our high-performing kitchen team. Located along the spectacular Outstanding Ocean Road, our venue is a favourite with both locals and the thousands of visitors who flock to Apollo Bay each year. This is a fantastic opportunity for a passionate chef who thrives in a fast-paced, high-volume environment and is ready to take the next step in their career.

What you'll be doing:

- Support the Head Chef in the day-to-day running of the kitchen
- Lead and motivate the team during busy services
- Maintain high food quality and presentation standards
- Assist with rostering, ordering, stock control and cost management
- Train and develop junior chefs
- Ensure food safety and compliance standards are consistently met

About you:

- Previous experience as a Sous Chef or a strong Senior Chef ready to step up
- Proven experience working in high-volume kitchens
- Calm under pressure with excellent time management skills
- Passionate about quality food and leading by example
- Strong communication and organisational skills
- Flexible availability, including evenings, weekends and public holidays
