Mantra Lorne is located on the Great Ocean Road, covering 12 acres of landscaped gardens and offering beachfront accommodation ranging from heritage hotel rooms to up-to-date apartments. The on‑site restaurant, The Larder, serves breakfast, lunch and dinner made from locally sourced ingredients. It is also the largest regional conference venue in Victoria, hosting up to 600 guests for corporate and private events.

Purpose

As Executive Chef, you lead culinary excellence for our guests. You mentor the kitchen team, design enticing menus, supervise food preparation, and maintain a smoothly functioning, safe kitchen to provide an exceptional dining experience for every guest.

Primary Responsibilities

- Develop and update menus, selecting ingredients, crafting recipes, and ensuring variety and quality
- Oversee daily kitchen operations, including staff scheduling, inventory management and kitchen hygiene
- Supervise the cooking process, ensuring dishes meet the highest standards of taste, presentation and portion size
- Manage the kitchen budget,



control food costs and minimise waste to maximise profitability
- Hire, train and supervise kitchen staff – chefs, cooks and kitchen assistants – to ensure smooth operation
- Collaborate with restaurant management, front‑of‑house staff and suppliers to coordinate the overall dining experience and address issues

Skills & Experience

- Previous experience as an Executive, Head or Senior Sous Chef
- Proven menu development skills, crafting innovative dishes with seasonal ingredients, accommodating dietary needs and maintaining top‑notch presentation
- Passion for food, exceptional attention to detail, and persistence of excellence
- Strong organisational abilities for preparation, planning and cost control
- A natural team player who thrives in a collaborative environment, yet can work autonomously with ease
- Excellent personal presentation, communication skills and a positive energy and attitude
- Flexibility to work a range of shifts, including weekends and public holidays, as required
