About the Role
As the Site Manager, you will be responsible for the overall operation of the venue, ensuring exceptional service, operational efficiency, and financial performance. You will lead and develop a diverse team while maintaining the highest standards of food safety, customer service, and workplace compliance.
Key Responsibilities
- Oversee the daily operations of the café, restaurant, Grab & Go service, and functions.
- Lead, coach, and develop front and back-of-house teams to deliver exceptional customer service.
- Recruit, train and roster the full FOH team ahead of opening.
- Prepare and manage staff rosters in line with operational requirements and labour budgets.
- Drive a positive team culture built on accountability, communication, and continuous improvement.
- Monitor venue performance, labour costs, food costs, and operating expenses.
- Ensure outstanding presentation, cleanliness, and maintenance throughout the venue.
- Maintain compliance with Food Safety, OH&S;, and company policies and procedures.
- Work closely with the Head Chef to ensure seamless service and operational excellence.
- Manage stock control, ordering, supplier relationships, and inventory.
- Lead guest experience and complaint resolution for a high‑expectation international audience.
- Own daily operations: opening/closing, cash and POS reconciliation, banking, incident and maintenance reporting.
- Identify opportunities to improve efficiency, profitability, and the overall guest experience.
- Ensure the venue is prepared for peak tourism periods and special events.
About You
To be successful in this role you will have:
- 3+years leading FOH team in a high‑volume hospitality venue such as a café, restaurant, hotel, or tourism operation.
- Experience managing labour costs, budgets, and financial performance.
- Strong leadership and people management skills with the ability to motivate and develop teams.
- Excellent operational, organisational, and problem-solving abilities.
- Strong understanding of food safety, workplace health and safety, and compliance requirements.
- Calm, visible floor leadership at peak, excellent service recovery.
- Availability to work weekends, public holidays, and peak tourism periods.
- Full Australian working rights, ability to be based near the Great Ocean Road.
Desirable
- Hold Victorian RSA and Food Safety Supervisor certificates.
- Multi-outlet or kiosk/counter-service experience.
- First Aid qualification.
- Experience in tourism or large-volume hospitality operations.
