Just months later, we faced the unexpected challenge of covid-19.
As lockdowns emptied our city, we were forced to close our doors due to lockdowns and a city that had turned into a ghost town. During this time, Laura found solace in baking for her family, sparking the idea for our “High Tea in a Box” originally created as a one-time Mother’s Day gift. With nothing more than a simple letterbox drop in the local area, the response was overwhelming.
Orders poured in, and what started as a heartfelt gesture turned into a lifeline. Through dedication, long hours, and unwavering community support, Collins Coffee House not only survived but flourished. We are currently seeking askilled and passionate full-time Pastry Cookto join our team. About the Role The Pastry Cook is responsible for preparing, baking, decorating,
and presenting a variety of pastries, cakes, desserts, breads, and other baked goods in accordance with established recipes, quality standards, and food safety requirements.
The role requires the application of specialised pastry-making techniques to produce high-quality products that meet customer expectations. The Pastry Cook will work collaboratively with the kitchen team to ensure efficient production, maintain inventory levels, monitor product quality, and contribute to menu development. The position requires strong technical skills, attention to detail, creativity, and the ability to work effectively in a fast-paced commercial kitchen environment while maintaining high standards of hygiene and workplace safety.
Tasks/responsibilities: -Preparing, baking, and decorating pastries, cakes, desserts, biscuits, breads, and other baked products.
- Measuring and combining ingredients according to recipes and production requirements.
- Preparing doughs, batters, fillings, creams, icings, and other pastry components.
- Monitoring baking times, temperatures, and product quality to ensure consistency and compliance with standards.
- Decorating and finishing pastry products to meet presentation and customer requirements.
- Developing and testing new pastry items and seasonal products.
- Ensuring all products are prepared and presented to a high standard of quality.
- Checking the quality of raw ingredients and finished products.
- Maintaining stock levels and assisting with ordering ingredients and supplies.
- Operating, cleaning, and maintaining baking and pastry equipment.
- Ensuringcompliance with food safety, hygiene, and workplace health and safety requirements.
- Assistingwith production planning, menu development, and cost control.
- Supervising and providing guidance to junior kitchen staff and apprentices as required.
Skills and Experience AQF Certificate III in Patisserie, Certificate IV in Patisserie, or equivalent relevant qualification. At least 3 year of relevant experience as a Pastry Cook or Baker in a commercial bakery, café, or kitchen environment. Sound knowledge of pastry preparation, dough handling, baking techniques, and dessert production.
Ability to follow recipes and maintain consistency, quality, and presentation standards. Understanding of food safety, hygiene, and workplace health and safety procedures. Strong time management skills and ability to work efficiently during busy production periods.
Good attention to detail and ability to work both independently and collaboratively within a team environment. Flexibility to work across weekdays, weekends, early mornings, and public holidays as required.
