About thisopportunity:

We arelooking for a Junior Sous Chef to work within our talented Pastryteam. Join our world-class culinary brigade who thrive on a positive teamculture and innovation. You will assist to supervise and manage aspects of thedelivery of our Pastry product, while keeping with our standards of foodquality and compliance. Key responsibilities will include:

- Effectively lead and oversee staff management within the Pastry production kitchen.
- Provide a high standard preparation for all of our events.
- Deliver functions, large scale events, and must be able to manage and facilitate several sections simultaneously.
- Plan, coordinate and manage Production schedules, efficient rostering and food preparation at our world-class standards.
- Ensuring strict food safety standards, preparation,



presentation and cooking techniques are established and monitored to meet ICC Sydney Brand Standard guidelines and maintained at that level.
- Embrace our Feeding Your Performance philosophy with a focus on fresh, seasonal and local artisan produce.
- Effectively manage the day-to-day operation of the Production kitchen, food cost, portion control, labour cost, productivity and wastage.

RequiredSkills & Experience:

We are excited to hear from aninspiring and innovative professional Chef, who has experience in a similarkitchen role at a high-volume quality driven establishment.

- Current working knowledge of the hospitality, convention, and exhibition industry.
- Ability to communicate clearly and concisely.
- A solution focused professional who continuously seeks learning and improvement.
- Adaptable to changing situations while maintaining the highest quality of product and other established standards.
- Ability to work with minimal external assistance.
- True passion for food and an unrelenting drive to provide exceptional event guest experiences.
- An ability to maintain safety standards and to abideto HACCP and ISO.
- Certificate III in Commercial Cookery.
- Food Safety Supervisor certificate.
- Valid working rights in Australia.
- You must be 18 years or over
