About the Role

As Cellar Manager, you will oversee the day-to-day operation of the Finished Wine Cellar,ensuring wine is prepared efficiently, safely, and to the highest quality standards. You'lllead a dedicated cellar team, drive operational improvements, and ensure productiontargets are met. You will be responsible for managing all aspects of cellar operationswhile fostering a positive and safety-focused team culture. You'll play a key role inmaintaining product quality, improving operational efficiency, and ensuring compliancewith food safety and workplace standards

Your responsibilities will include:

- Leading and coordinating the Finished Wine Cellar team, including CellarSupervisors and Cellar Hands.
- Managing all cellar operations to ensure wine quality is maintained throughout theproduction process.
- Identifying and implementing process improvements using lean manufacturingprinciples.
- Overseeing cleaning and sanitation procedures, including filtration and CIPoperations.
- Developing and maintaining Standard Work Instructions (SWIs), riskassessments, and quality documentation.
- Ensuring compliance with HACCP, BRC, ChemWatch, and company quality systems.
- Planning weekly rosters and batching schedules in collaboration with the Commercial Winemaker.




- Conducting regular team meetings, toolbox talks, and performance reviews.
- Coaching, mentoring, and developing employees while promoting a collaborativeteam environment.
- Monitoring wine preparation, filtration, approvals, and additions to ensureproducts meet bottling specifications.
- Working closely with Quality, Laboratory, Production Planning and Maintenanceteams to achieve production goals.
- Maintaining a strong focus on workplace health and safety, housekeeping, andcontinuous improvement.

You have strong organisational skills, excellentattention to detail, and understand the importance of quality, safety, and teamwork in aproduction environment. You're comfortable balancing operational priorities while leadingcontinuous improvement initiatives and maintaining high standards across the cellar.

To be successful in this role, you'll bring:

- Previous leadership experience within a winery, beverage manufacturing orproduction environment.
- Strong knowledge of cellar operations and wine preparation processes.
- Excellent communication and people leadership skills.
- A commitment to workplace safety, food safety, and quality systems.
- Sound computer skills and the ability to maintain accurate documentation.
- Confined Space competency (or willingness to obtain).
- Flexibility to work weekends and varying hours during busy production periods.
- A proactive, reliable, and hands-on approach.
