The Opportunity

We're seeking an experienced Sous Chef to help lead the kitchen at Florentino Dining Room.

Working alongside an exceptional team, you'll play a key role in delivering refined Italian cuisine through modern technique, outstanding seasonal produce and uncompromising attention to detail. You'll lead day-to-day kitchen operations, mentor and develop your team, and work closely with front-of-house to deliver an exceptional guest experience.

This is a rare opportunity to step into a leadership role at one of Australia's most celebrated restaurants and contribute to the next chapter of an iconic Melbourne institution.

Our ideal candidate will have

- 2+ years experience as Junior Sous or Sous Chef within premium, hatted or michelin starred restaurants
- Strong knowledge of traditional and contemporary Italian cuisine
- Demonstrated ability to lead,



mentor and develop a high-performing kitchen team
- Excellent organisational skills with experience managing kitchen operations, ordering, stock control and food costing
- A passion for seasonality, sustainability and working with premium local produce
- Experience developing and implementing new dishes, menu cycles and culinary concepts
