Chancery Lane Bistro is seeking an experienced Chef de Partie to join our talented kitchen team in Melbourne VIC 3000. This is a full-time position that offers the opportunity to work in a dynamic, fast-paced hospitality environment where culinary excellence and creativity are highly valued. As Chef de Partie, you will take responsibility for a specific section of our kitchen, ensuring the highest standards of food quality, consistency, and presentation are maintained at all times. This role is integral to the success of our restaurant operations and directly contributes to delivering an exceptional dining experience for our guests.

Key responsibilities

- Lead your section during preparation and service
- Work closely with the Head Chef and Sous Chefs
- Train and support junior chefs
- Maintain exceptional food quality and consistency
- Contribute ideas and help drive continuous improvement
- Be part of a kitchen that values teamwork above ego

What we look for

Proven experience as a Chef de Partie or similar senior kitchen role within a busy restaurant or hospitality environment

Strong knowledge of cooking techniques, food preparation, and kitchen operations in line with hospitality and tourism industry standards

Demonstrated expertise in a specific kitchen section (such as sauce, pastry, grill or vegetable stations)

Excellent organisational and time management skills, with the ability to work efficiently during high- pressure service periods

Leadership capabilities and the ability to train, motivate and manage junior kitchen staff effectively

A thorough understanding of food safety, hygiene regulations and best practices, including current food handling certifications

Creativity and passion for culinary excellence with a commitment to producing consistently high-quality dishes

Strong communication skills and the ability to work collaboratively within a kitchen team environment





Attention to detail and a commitment to maintaining consistent plating and presentation standards

Flexibility with working hours, including evenings, weekends and public holidays as required by the hospitality industry

Preference for candidates with experience in contemporary or European cuisine and familiarity with seasonal menu planning
