A neighbourhood restaurant and wine bar located in Bay Street Brighton,

Celebrated for its seasonal, three‑course menu in the restaurant (shared starters, mains, and desserts) and optional wine pairings—and all crafted using the finest local produce, along with a contemporary Wine bar with private dining spaces .

Role Overview

You will:

Develop and execute seasonal three-course menus, along with working in the wine bar kitchen ensuring each dish highlights locally sourced, top-tier ingredients.

Collaborate closely with head chefs and culinary leadership to preserve Baix’s and 81 Baix culinary identity.

Help Lead kitchen operations during service—5 nights and 2 lunches per week





Contribute to menu evolution, plate presentation, consistency, and contributing ideas for wine-pairing optimised dishes.

What We’re Looking For

Proven experience in high-end or fine-dining kitchens, with strong understanding of European or contemporary cuisine.

A passion for seasonal produce, food storytelling, and culinary artistry.

Exceptional attention to detail, from flavor balance to presentation.

Ability to thrive in a tight-knit, cooperative team environment.

A flexible and adaptive approach to evolving menus and service rhythms.
