We are seeking an experienced and passionate Sous Chef to join the culinary leadership team at the Pan Pacific Melbourne Hotel.

Working closely alongside the Executive Chef, the Sous Chef will play a pivotal leadership role within the kitchen, supporting daily operations while driving culinary excellence, consistency, and team engagement across all outlets.

Key Responsibilities

- Support the Executive Chef in the day-to-day management of kitchen operations
- Lead, mentor, and motivate the kitchen team to deliver exceptional food quality and service standards
- Ensure compliance with food safety, hygiene, and WHS standards at all times
- Assist with menu execution, food quality control, and cost management
- Support daily stewarding operations, team organisation, and workflow efficiency




- Foster a positive, cooperative, and high-performance kitchen culture

About You

- Proven experience as a Sous Chef or solid Junior Sous Chef, ideally within a luxury hotel or high-end hospitality environment
- Strong leadership skills with the ability to inspire and develop diverse teams
- Sound knowledge of food safety, HACCP, and operational compliance
- Experience working collaboratively across kitchen and stewarding functions
- Excellent organisational skills with a hands‑on, solutions-focused approach
- A passion for culinary excellence and delivering five-star guest experiences
